Students and teachers at Holy Trinity School in Fall River have embarked on a project of growing produce with their wares now being featured in dishes at a Warren, RI restaurant.
Two years ago the school applied for a grant to expand its STEM program to include hydroponics. Teacher Kevin Flynn took the lead on the project, called Trinity Greens, and developed an educational program that included all students at Holy Trinity.
Mr. Flynn says the produce grown is used in salads in the school cafeteria and can be harvested in a relatively short period of time.
When the school realized it was growing more lettuce and micro-greens than it could handle, Mr. Flynn, through a mutual friend, reached out to Chef Richard Allaire of Metacom Kitchen in Warren. Chef Allaire welcomed the opportunity to incorporate the produce into his diverse menu.
Seventh and eighth graders at Holy Trinity say the hydroponics project gives them a greater appreciation of science and its healthy and sustainable impact within the community.
